Nachos
{Mmmm, beany goodness.}
Ingredients:
1 packet corn chips
1 (large) bottle pasta sauce (basil/olive)
1/3 cup of each lima, red kidney, borlotti, cannelli beans (dried) OR canned equivalent
1/2 green capsicum
1 tomato
1 block of fetta cheese (~200g)
1½ - 2 cups grated tasty cheese
Recipe:
Preheat oven to 180°C (maybe more if not fan forced). Put borlotti and cannelli beans in a pan with 4 cups of water. Bring to boil. Simmer for 10 minutes. Add red kidney and lima beans and simmer for 45 minutes more then drain (skip if canned, or follow packet directions if you have soaked the beans). Meanwhile chop the capsicum, fetta and the tomato coarsely. Make a layer with half the chips, sauce, beans, capsicum, tomato, fetta and tasty cheese. Repeat with a 2nd layer. Put in the oven for 15-20 minutes until browned on top and smelling capsicumy.
