Jam Slice
{for when SOMEONE has opened about 50 jars of jam and they are taking up too much room in the fridge and a moratorium has been placed on condiments.}
Ingredients:
125 g butter
1/3 cup caster sugar
1 cup plain (all purpose) flour, sifted
1 teaspoon baking powder
1 egg yolk
¾ cup raspberry jam (jelly)
topping:
½ cup caster (superfine) sugar
1 egg, lightly beaten
1 cup dessicated coconut
Recipe:
Preheat the oven to 180 °C (350 °F) Process the butter, sugar, flour and baking powder in a food processor until combined. Add the egg yolk and continue to process until the mixture forms a soft dough. Press into a 20 cm x 30 cm (8 in x 12 in) slice tin lined with non-stick baking paper. Bake fro 12-15 minutes or until the base is golden bropwn. Allow to cool then spread with the jam.
To make the topping, combine the sugar, egg and coconut. Sprinkle over the jam. Bake for 25 minutes or until golden. Cool in teh tin. cut into slices. Makes 24 slices.
