Cherry Ripe Slice

A layer of chocolate, a layer of cherries and coconut= cherry ripe slice.


190 g. (½ of a 375 g block) dark cooking chocolate
2 cups dessicated coconut
1 cup sugar
1 packet (250 g?) glace cherries, chopped
3 eggs


Melt chocolate in the microwave. Grease lamington tray, then pour the chocolate into the tray and smooth. Cool in the fridge until hard. Combine all the other ingredients. Pour on top of the hardened chocolate and smooth. Bake at 170 °C for 20-25 minutes. Allow to cool. Cut into squares when nearly cool. Best served cold (store in the freezer or fridge)
